Mashed potatoes with Spinach and Almonds

Ingredients

  • The ingredients needed for the mashed potatoes and spinach:

    • Potatoes

    • Baby Spinach

    • Salt

    • Black pepper or ginger

    • Ghee

    • Coriander, Fennel, Mint

    • Almond pieces or sliced


  • Preparation and cooking time 30-40 minutes

  • Peel and chop six large potatoes and boil them in salted water until they are soft, about 15 to 20 minutes.

  • Drain the potatoes and mash them with a potato masher or a fork. After mashing the potato, add a tablespoon of ghee and a sprinkle of black pepper and place the mash potato aside for a while. (Optional) you can add some butter, buttermilk, salt, and pepper to make it creamier and more flavorful.

  • After, wash and chop some fresh spinach. In a skillet add one tablespoon of Ghee, ginger, cumin, fennel, coriander, mint, salt, and pepper until you can smell the aroma, about 45 seconds. Then add the spinach and cook for about 5 to 10 minutes until wilted.

  • Serve the mashed potatoes on a large platter or bowl and top them with the spinach sprinkle the roasted almonds, then add a slice of lemon to add to the flavor. Enjoy your meal!
