Winter beet salad

Ingredients

5 to 7 beets washed and peeled.

4 large carrots

1 head of broccoli

½ of cauliflower

Celery leaves

salt and pepper

Coriander and cumin

Grated Ginger

Oregano

Melted Ghee

3 tbsp pomegranate seeds

For Lemon-Honey Vinaigrette

¼ cup extra virgin olive oil

½ of  fresh Rosemary

2 tbsp lemon juice

1 tbsp of honey

Salt and pepper

To prepare the Winter Beets Salad, clean and peel the beets and add them in hot boiling water with some salt for 20 minutes. Meanwhile, in a pan add 2 tbsp of Ghee, add the spices, the ginger, and the salt. When the spices are roasted, toss the broccoli and cauliflower and the sliced carrots for 10 to 15 minutes. Check them after 15 minutes, remove the vegetables from the fire, then the beets. Set them aside to cool off.

After prepare the vinaigrette, by mixing the fresh lemon juice, honey, a pinch of salt and pepper, and 1 tbsp of extra virgin olive oil and hints of pine rosemary.

Peel the beets and cut them into large pieces and add the broccoli, cauliflower, and carrots on a plate and add the beets, add the pomegranate seeds, then sprinkle the lemon honey dressing on top of the beets and the other vegetables. Serve with rice, or poultry; sweet or mashed potatoes or eat this delicious and healthful salad at alone. Enjoy!
