Roasted carrots with walnuts and tahini
Here is a delicious Roasted, Carrots, Walnuts, and Tahini recipe. Carrots are a nutritious and beneficial addition to your diet.
Carrots are rich in beta-carotene and vitamin A and essential nutrient for good vision. Also carrots are low in calories and high in fiber, making them a great choice for a healthy diet.
Ingredients
2 lbs. small to medium carrots, peeled or grated.
2 tablespoon Ghee or olive oil
1/4 teaspoon sea salt
1/4 teaspoon black mustard seeds
1/4 teaspoon Cumin seeds or powder
1/4 teaspoon Coriander seeds or powder
½ cup of sweet orange juice
½ cup of walnuts crushed
1 cup of tahini homemade
Tahini Ingredients:
1 cup hulled sesame seeds
2 tablespoons Ghee or Olive oil
¼ teaspoon of salt
¼ teaspoon of yellow mustard seeds
Instructions:
Preheat your oven to 400°F (200°C).
In a saucepan add 1 teaspoon of Ghee or olive oil, salt, mustard seed, cumin, and coriander seeds. Sautee all the spices for 1 minute.
Toss the carrots in the spices until they are well coated.
Spread the carrots on a baking sheet, add the orange juice, and roast in the oven for 20 minutes, until they are tender and golden.
After removing them from the oven, add the remaining Ghee to enhance taste and soften them. When the carrots are cold, sprinkle the crushed walnuts and serve with the tahini.

Instructions:
Roast the sesame seeds in a skillet over medium heat, stir them until they are lightly golden and aromatic.
Let the sesame seeds cool for five minutes, then transfer them to a blender or food processor.
Blend the sesame seeds for 1 minute until they turn into a creamy paste.
While in the blender, add the Ghee or Olive oil, salt, and the mustard seeds until they reach a creamier consistency.
The roasted carrots are perfect as a side dish and eaten with a balance bowl of basmati rice, peas, and broccoli. Enjoy your roasted carrots!
